Ingredients
- 4 medium potatoes, diced
- 1 cup shredded cheddar cheese
- 4 large eggs
- ½ cup milk
- ½ cup cooked turkey sausage, chopped (optional)
- ¼ cup green onions or chives, chopped
- 2 tbsp butter
- Salt and pepper, to taste
Instructions
1. Prepare the Potatoes:
- Boil the diced potatoes in salted water for 10–15 minutes, until fork-tender. Drain and set aside.
2. Cook the Potatoes:
- In a large skillet, melt butter over medium heat.
- Add the boiled potatoes and cook for 5–7 minutes, until golden and slightly crispy.
- If using turkey sausage, add it to the skillet and cook for an additional 2–3 minutes, until heated through.
3. Prepare the Egg Mixture:
- In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
4. Combine and Cook:
- Pour the egg mixture over the potatoes in the skillet.
- Gently stir to combine, allowing the eggs to scramble with the potatoes.
- Cook for about 5 minutes, stirring occasionally, until the eggs are fully cooked.
5. Add Cheese and Serve:
- Sprinkle the shredded cheddar cheese over the mixture.
- Cover the skillet with a lid and cook for 2–3 minutes, until the cheese melts.
- Remove from heat and garnish with chopped green onions or chives before serving.
