Ingredients

  • 4 medium potatoes, diced
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • ½ cup milk
  • ½ cup cooked turkey sausage, chopped (optional)
  • ¼ cup green onions or chives, chopped
  • 2 tbsp butter
  • Salt and pepper, to taste

Instructions

1. Prepare the Potatoes:

  1. Boil the diced potatoes in salted water for 10–15 minutes, until fork-tender. Drain and set aside.

2. Cook the Potatoes:

  1. In a large skillet, melt butter over medium heat.
  2. Add the boiled potatoes and cook for 5–7 minutes, until golden and slightly crispy.
  3. If using turkey sausage, add it to the skillet and cook for an additional 2–3 minutes, until heated through.

3. Prepare the Egg Mixture:

  1. In a bowl, whisk together eggs, milk, salt, and pepper until well combined.

4. Combine and Cook:

  1. Pour the egg mixture over the potatoes in the skillet.
  2. Gently stir to combine, allowing the eggs to scramble with the potatoes.
  3. Cook for about 5 minutes, stirring occasionally, until the eggs are fully cooked.

5. Add Cheese and Serve:

  1. Sprinkle the shredded cheddar cheese over the mixture.
