Description

Cheesy Hamburger Rice Casserole is a hearty and comforting dish made with seasoned ground beef, tender rice, creamy mushroom soup, and melted cheddar cheese. It is an easy, family-friendly meal perfect for busy weeknights.

Ingredients

1 lb ground beef

1 onion, chopped

1 garlic clove, minced

1 cup long-grain rice, uncooked

2 cups beef broth

1 (10.75 oz) can cream of mushroom soup

1 cup cheddar cheese, shredded

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef, chopped onion, and minced garlic until beef is browned and onions are soft. Drain excess fat.
  3. Stir in uncooked rice, beef broth, and cream of mushroom soup. Season with salt, black pepper, and paprika. Bring to a boil, then reduce heat and simmer for 5 minutes.
  4. Transfer mixture to prepared baking dish and spread evenly. Cover with aluminum foil.
  5. Bake for 25 minutes.
  6. Remove foil, sprinkle shredded cheddar cheese over the top, and return to oven uncovered. Bake for an additional 10–15 minutes until cheese is melted and bubbly and rice is tender.
  7. Garnish with chopped parsley and serve warm.

Use mozzarella or a cheese blend for a different flavor.

Add a pinch of chili flakes or hot sauce for heat.

Store leftovers in the refrigerator for up to 4 days.

Freeze for up to 2 months and thaw before reheating.
