Description

A creamy, comforting casserole made with seasoned ground beef, tender rice, mushrooms, and plenty of melted cheddar cheese. This easy, one-pot family favorite uses simple pantry staples and delivers hearty, cozy flavor every time.


Ingredients

1 lb ground beef (85% lean)

1½ teaspoons Italian seasoning

Salt, to taste

Black pepper, to taste

3 tablespoons butter, divided

¾ cup diced onion

1 tablespoon minced garlic

2½ cups beef broth

1¼ cups uncooked long-grain white rice (not instant)

8 oz sliced button mushrooms

10.5 oz cream of mushroom soup

½ cup milk

½ cup sour cream

2 cups cheddar cheese, divided


Instructions

  1. Preheat oven to 350°F.
  2. In a large pot over medium-high heat, brown the ground beef. Season with salt, pepper, and Italian seasoning as it cooks.
  3. Drain excess grease, transfer beef to a plate, and cover with foil.
  4. In the same pot, melt 2 tablespoons of butter. Add diced onion and cook for about 5 minutes until softened.
  5. Add garlic and cook for 1 more minute.
  6. Add beef broth, remaining butter, and uncooked rice. Stir to combine.
  7. Bring to a boil, reduce to a simmer, cover tightly, and cook for 10 minutes.
  8. Add mushrooms without stirring, cover again, and cook for an additional 5–10 minutes, following rice package instructions.
  9. Turn off heat and let stand, covered, for 10 minutes.
  10. Add cooked ground beef, cream of mushroom soup, milk, sour cream, and half of the cheese. Stir until well combined.
  11. Transfer mixture to a lightly greased 9 x 13-inch casserole dish and top with remaining cheese.
  12. Cover and bake for 20 minutes, until hot and cheese is melted. Serve warm.

Notes

Do not stir the rice while it cooks to ensure proper texture.

Ground turkey can be used instead of ground beef.

Add peas, carrots, or bell peppers for extra vegetables.

Use gluten-free cream of mushroom soup if needed.
