Description
Cheesy Chicken Spaghetti is a classic Southern comfort food casserole made with tender shredded chicken, creamy sauce, colorful peppers, and plenty of melted cheddar. It’s hearty, flavorful, and perfect for family dinners, potlucks, or meal prep.
Ingredients
3 to 4 boneless, skinless chicken breasts (about 1.5 pounds)
8 ounces dried spaghetti
1 can (10.5 ounces) condensed cream of chicken soup
1 cup fresh bell peppers, chopped
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
2 cups sharp cheddar, shredded (divided)
1/4 cup green onions, sliced (for garnish)
Instructions
- Preheat oven to 350°F (175°C). Grease a large casserole dish.
- Cook chicken breasts in a large pot over medium heat for 6–7 minutes per side until fully cooked. Let cool slightly, then shred.
- Boil spaghetti in salted water for 8–10 minutes until al dente. Drain and set aside.
- In a large bowl, mix shredded chicken, cooked spaghetti, cream of chicken soup, chopped bell peppers, paprika, garlic powder, cayenne, and half of the shredded cheddar.
- Pour mixture into the prepared casserole dish. Sprinkle remaining cheddar evenly on top.
- Bake uncovered for 25–30 minutes until bubbly and golden on top.
- Let cool for 5 minutes. Garnish with sliced green onions before serving.
Notes
Use rotisserie chicken to save time.
For extra creaminess, stir in 1/2 cup sour cream before baking.
Adjust spice by adding jalapeños or more cayenne.
Swap cheddar for Monterey Jack, mozzarella, or a cheese blend.
Freeze baked or unbaked casserole for up to 2 months.
