Description

A creamy, crunchy blend of fresh cabbage, carrots, and cheddar cheese, this Cheese Slaw is the ultimate side dish for any meal—from casual cookouts to cozy dinners. It’s quick to prepare, full of vibrant flavors, and adds a refreshing touch to your table.

Ingredients

4 cups green cabbage, finely shredded

2 cups red cabbage, shredded

2 large carrots, grated

1 ½ cups cheddar cheese, freshly shredded

¾ cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon celery seeds

Instructions

  1. Chill a large mixing bowl for 10 minutes if desired.
  2. In the chilled bowl, combine green and red cabbage, grated carrots, and shredded cheddar cheese.
  3. In a smaller bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, black pepper, and celery seeds until smooth.
  4. Pour the dressing over the cabbage mixture and toss gently to coat evenly.
  5. Refrigerate the slaw for at least 30 minutes to allow the flavors to meld.
  6. Toss again before serving and adjust seasoning if necessary.
  7. Serve chilled as a side dish, topping, or standalone salad.

Notes

Add chopped bell peppers, radishes, or jicama for extra crunch.

Use vegan mayonnaise and maple syrup for a vegan version.

Try sharp gouda or pepper jack for a different cheese flavor.

Increase vinegar to 3 tablespoons for a tangier dressing.

Add cayenne pepper or hot sauce for a spicy version.

Store in the refrigerator in an airtight container for up to 3 days.

Toss before serving if liquid has settled.
