Description

Cheddar Cups with Avocado Feta Mousse are a delicious and elegant appetizer, combining the savory, cheesy flavor of crispy cheddar cups with a creamy, tangy avocado feta mousse. Perfect for any gathering, these bite-sized treats are sure to impress with their unique texture and flavors.


Ingredients

2 cups shredded aged cheddar cheese

½ cup all-purpose flour

1 tablespoon fresh herbs (like thyme or parsley), chopped

½ teaspoon garlic powder

¼ teaspoon salt

¼ teaspoon black pepper

2 large eggs

1 ripe avocado

½ cup feta cheese, crumbled

1 tablespoon lemon juice

2 tablespoons Greek yogurt or sour cream

Salt and pepper to taste

Fresh herbs, for garnish (like parsley or thyme)


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray.
  2. In a mixing bowl, combine shredded cheddar cheese, all-purpose flour, fresh herbs, garlic powder, salt, and black pepper. Stir until all ingredients are evenly incorporated.
  3. Beat the eggs in a separate bowl and add them to the dry mixture. Stir until fully combined, and the mixture begins to form a dough-like consistency.
  4. Using a tablespoon, scoop the cheese mixture into each muffin tin section, pressing down lightly to form small cups. Ensure they are evenly distributed across the tin.
  5. Place the muffin tin in the preheated oven and bake for 10–12 minutes or until the edges of the cheddar cups are golden brown and crispy.
  6. Once baked, remove the tin from the oven and let the cheddar cups cool for 5 minutes. Gently remove them from the tin and set aside on a cooling rack.
  7. In a bowl, mash the ripe avocado until smooth. Add crumbled feta cheese, lemon juice, Greek yogurt or sour cream, salt, and pepper. Mix everything together until it becomes a smooth, creamy mousse.
  8. Spoon the avocado feta mousse generously into each cooled cheddar cup. Be sure to fill them up nicely but not too much, leaving a little space at the top for garnish.
  9. Top with fresh herbs like parsley or thyme for a lovely finishing touch.
  10. Serve immediately while the cheddar cups are fresh and crispy.

Notes

Feel free to use different types of cheese for the cheddar cups, such as Gruyère or Monterey Jack, for a different flavor.

If you don’t have a mini muffin tin, you can shape the cups on a baking sheet, but the baking time may differ.

The avocado feta mousse can be made ahead of time and stored in the fridge for up to 1 day.
