Ingredients
2 cups shredded aged cheddar cheese
½ cup all-purpose flour
1 tablespoon fresh herbs (like thyme or parsley), chopped
½ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper
2 large eggs
1 ripe avocado
½ cup feta cheese, crumbled
1 tablespoon lemon juice
2 tablespoons Greek yogurt or sour cream
Salt and pepper to taste

Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray.
- In a mixing bowl, combine shredded cheddar cheese, all-purpose flour, fresh herbs, garlic powder, salt, and black pepper. Stir until all ingredients are evenly incorporated.
- Beat the eggs in a separate bowl and add them to the dry mixture. Stir until fully combined, and the mixture begins to form a dough-like consistency.
- Using a tablespoon, scoop the cheese mixture into each muffin tin section, pressing down lightly to form small cups. Ensure they are evenly distributed across the tin.
- Place the muffin tin in the preheated oven and bake for 10–12 minutes or until the edges of the cheddar cups are golden brown and crispy.
- Once baked, remove the tin from the oven and let the cheddar cups cool for 5 minutes. Gently remove them from the tin and set aside on a cooling rack.
- In a bowl, mash the ripe avocado until smooth. Add crumbled feta cheese, lemon juice, Greek yogurt or sour cream, salt, and pepper. Mix everything together until it becomes a smooth, creamy mousse.
- Spoon the avocado feta mousse generously into each cooled cheddar cup. Be sure to fill them up nicely but not too much, leaving a little space at the top for garnish.
- Top with fresh herbs like parsley or thyme for a lovely finishing touch.
- Serve immediately while the cheddar cups are fresh and crispy.
Notes
Feel free to use different types of cheese for the cheddar cups, such as Gruyère or Monterey Jack, for a different flavor.
If you don’t have a mini muffin tin, you can shape the cups on a baking sheet, but the baking time may differ.
