Description

Cheddar Bay Biscuit Seafood Pot Pie combines a rich, creamy seafood filling with a cheesy, golden biscuit topping for a comforting and indulgent meal.

Ingredients

1 lb shrimp, peeled and deveined

1 lb crab meat (or imitation crab)

1 cup fish fillets (e.g., cod or haddock), cut into chunks

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup heavy cream

2 cups chicken or seafood broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 package of Cheddar Bay Biscuit mix (includes cheddar cheese and seasoning)

¾ cup milk (for the biscuit mix)

¼ cup melted butter (for the biscuit topping)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Seafood: In a large pot over medium heat, combine the shrimp, crab meat, and fish fillets. Cook for about 3-4 minutes until the shrimp turns pink. Remove from heat and set aside.
  3. Make the Sauce: In the same pot, add the chicken or seafood broth, heavy cream, garlic powder, onion powder, thyme, salt, and pepper. Stir to combine and bring to a simmer.
  4. Add Vegetables: Stir in the frozen mixed vegetables and cooked seafood. Cook for an additional 5 minutes until everything is heated through.
  5. Thicken the Filling: Stir constantly until the mixture thickens slightly, about 5 more minutes. Remove from heat and set aside.
  6. Prepare Biscuit Mixture: In a bowl, pour the Cheddar Bay Biscuit mix and add milk. Stir gently until just combined, being careful not to overmix.
  7. Combine in Baking Dish: Pour the seafood mixture into a large baking dish. Spoon the biscuit mixture over the top, covering as much of the filling as possible.
  8. Add Butter: Drizzle the melted butter over the biscuit topping for extra flavor and a golden finish.
  9. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the biscuit topping turns golden brown.
  10. Cool and Serve: Remove from the oven and let cool for 5-10 minutes before serving. Enjoy warm.

Notes

Swap shrimp, crab, or fish for other seafood such as scallops, lobster, or clams for variety.

Add or swap vegetables based on preference, such as mushrooms, spinach, or bell peppers.

For a gluten-free version, use gluten-free biscuit mix and ensure the broth is gluten-free.

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven or microwave.

To freeze, cover the unbaked pot pie tightly with plastic wrap and foil, and bake from frozen at 400°F (200°C) for 40-45 minutes.
