Description

These Carrot Veggie Bars are the perfect balance of wholesome and delicious. Packed with grated carrots, zucchini, oats, and warm spices, they make a great snack, breakfast bar, or healthy treat.


Ingredients

Grated carrots

Grated zucchini

Whole wheat flour

Rolled oats

Brown sugar

Honey or maple syrup

Unsweetened applesauce

Large eggs

Vanilla extract

Baking powder

Baking soda

Salt

Ground cinnamon

Nutmeg (optional)

Chopped walnuts or pecans (optional)

Raisins or dried cranberries (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk the eggs, brown sugar, honey or maple syrup, applesauce, and vanilla until smooth.
  4. Stir in the grated carrots and zucchini.
  5. Add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in chopped nuts and/or dried fruit, if using.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 30–35 minutes, until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice into bars and serve or store.

Notes

Use fine or medium holes on a box grater for the vegetables.

If zucchini is watery, gently squeeze before using.

Bars can be frozen for up to 2 months.
