Description

This Carrot Raisin Salad recipe is a fresh and creamy side dish, reminiscent of the popular one at Chick-fil-A. It features a blend of grated carrots, sweet raisins, pineapple tidbits, and a creamy mayonnaise dressing. This vibrant salad is perfect for any gathering or as a side to a main dish.

Ingredients

½ cup raisins

1 cup warm water (or leftover pineapple juice – just make sure it’s warm)

1 pound carrots

1 small can of pineapple tidbits, drained very well

½ cup mayonnaise

1 tablespoon granulated sugar

Instructions

  1. Plump the Raisins (Optional): Soak raisins in warm water or pineapple juice for 5 minutes. Drain excess liquid.
  2. Prepare the Carrots: Peel and grate the carrots using a box grater or food processor.
  3. Make the Salad: In a medium-sized bowl, combine the grated carrots, mayonnaise, and sugar. Toss until well combined.
  4. Add the Raisins and Pineapple: Add the soaked raisins and drained pineapple tidbits. Stir until everything is evenly mixed.
  5. Chill the Salad: Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Stir before serving.

Notes

For a dried fruit mix, try adding cranberries or golden raisins.

Add chopped walnuts or pecans for extra crunch.

For a vegan version, swap the mayonnaise with a plant-based alternative.

For a fresher taste, use fresh pineapple instead of canned.

For a lighter version, reduce sugar or use a sugar substitute like stevia.

For extra zest, add lemon or orange juice to the dressing.
