Description

These Carrot Coconut Balls with Chocolate Granules are a delicious no-bake dessert made with naturally sweet carrots, creamy yogurt, and shredded coconut. Easy to make and packed with nutrients, they’re the perfect guilt-free treat!

Ingredients

  • 56 medium carrots (approximately 400g), finely grated
  • 100g sugar
  • 100g white yogurt (or dairy-free alternative)
  • 150g coconut flour
  • Coconut flakes (for rolling)
  • Chocolate granules (for decoration)

Instructions

  1. Prepare the Carrots:

    • Wash, peel, and finely grate the carrots.
  2. Cook the Carrots:

    • In a saucepan over medium heat, combine the grated carrots and sugar.
    • Cook, stirring occasionally, until the mixture softens and the liquid evaporates (about 10-15 minutes).
  3. Incorporate Yogurt:

    • Remove from heat and let the mixture cool slightly.
    • Stir in the white yogurt until well combined.
  4. Add Coconut Flour:

    • Gradually mix in the coconut flour until a dough-like consistency forms.
    • If the mixture is too wet, add more coconut flour as needed.
  5. Form the Balls:

    • Take small portions and roll them into bite-sized balls using your hands.
  6. Coat with Coconut Flakes:

    • Roll each ball in coconut flakes to evenly coat.
  7. Decorate with Chocolate Granules:

    • Sprinkle chocolate granules on top for a decorative finish.
  8. Chill:

    • Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Nutty Addition: Add finely chopped almonds or walnuts for extra crunch.
  • Spiced Flavor: Mix in cinnamon or cardamom for a warm, aromatic touch.
  • Alternative Coatings: Roll in cocoa powder, powdered sugar, or crushed nuts instead of coconut flakes.
