- 3 cups chicken broth

- ½ pound andouille sausage, sliced
- 1 can (15 ounces) red beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (4 ounces) diced green chiles
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 2 teaspoons Cajun seasoning
- 1 small onion, chopped
- 1 cup pepper jack cheese, shredded
Instructions
- Make the Base: In a Dutch oven or large pot, melt butter and stir in flour. Cook for 2 minutes, then gradually whisk in chicken broth and half-and-half. Bring to a boil and cook for 2 minutes until thickened.
