Description

Ingredients

For the Bruschetta Topping:

3 medium ripe tomatoes, diced (or 2 cups cherry tomatoes, halved)

¼ cup fresh basil, chopped

2 cloves garlic, minced

2 tbsp olive oil

1 tbsp balsamic vinegar

Salt and pepper, to taste

For the Chicken:

1 lb boneless, skinless chicken breasts (or thighs), sliced into strips

1 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper, to taste

For the Pasta:

8 oz pasta (penne, fusilli, or spaghetti work well)

Optional: Grated Parmesan cheese, for serving


Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

  • Make the Bruschetta Topping: In a medium bowl, combine the diced tomatoes, basil, garlic, olive oil, balsamic vinegar, salt, and pepper. Stir gently to combine, then set aside to let the flavors meld.

  • Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken strips with Italian seasoning, salt, and pepper. Add the chicken to the skillet and cook for 5–7 minutes, stirring occasionally, until golden brown and cooked through. Remove from the skillet and set aside.

  • Combine Everything: In a large mixing bowl, toss the cooked pasta, chicken, and bruschetta topping together until well combined. Taste and adjust seasoning with additional salt, pepper, or balsamic vinegar if needed.

  • Serve: Divide the pasta among plates or bowls. Garnish with grated Parmesan cheese and extra fresh basil if desired. Serve warm or at room temperature.
