Ingredients
4 large chicken breasts
2 tbsp Cajun seasoning
1 1/8 tsp salt
1 cup broccoli, chopped
½ cup cheddar cheese
3 tbsp cream cheese

Instructions
- Preheat the oven to 375°F (190°C). Slice each chicken breast lengthwise to create a pocket, being careful not to cut all the way through. Season both sides and inside the pockets with Cajun seasoning and salt.
- In a bowl, mix chopped broccoli, cheddar cheese, cream cheese, and ⅛ teaspoon of salt to make the filling.
- Stuff each chicken breast with the broccoli and cheese mixture. Secure the pockets with toothpicks if needed.
- Brush the top of the chicken with olive oil, place on a baking sheet, and bake for 30 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before serving to allow juices to redistribute.
Notes
Feel free to swap cheddar with other cheeses like mozzarella or gouda.
For added flavor, you can add herbs like thyme, rosemary, or oregano to the filling.
Frozen broccoli can be used, but ensure it’s well-drained to prevent excess moisture in the filling.
