Ingredients
For the Soup:
1/4 cup butter
1/2 cup onion, chopped
2 cloves garlic, minced
1/4 cup flour
2 cups half and half
3 cups chicken broth
1/4 tsp nutmeg
2 bay leaves
1 cup carrot, shredded
4 cups broccoli florets
2 cups cheddar cheese, grated
Salt and pepper, to taste
Cornstarch, optional (to thicken)
Instructions
- Cook the Vegetables:
- Bring a pot of water to a boil. Add the shredded carrots and broccoli florets. Cook for about 6 minutes until tender. Drain and set aside.
- Make the Soup Base:
- While the veggies are cooking, melt butter in a large soup pot over medium-low heat. Add the chopped onion and sauté until tender. Add the minced garlic and cook for an additional minute.
- Create the Soup:
