Description

Ingredients

3 3/4 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon active dry yeast

1 teaspoon salt

3 large eggs

1/2 cup whole milk (warm)

1/2 cup unsalted butter (softened)

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

Optional: sesame seeds, poppy seeds, or flaky sea salt (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish for your pie crust.
  2. In a small bowl, combine warm milk with a pinch of sugar and sprinkle yeast over it. Let it sit for 5-10 minutes until frothy.
  3. In the bowl of a stand mixer, combine flour, remaining sugar, and salt. Add eggs and yeast mixture, mixing until combined.
  4. Gradually add softened butter while mixing, knead dough for 10-15 minutes until smooth and elastic.
  5. Transfer the dough to a greased bowl, cover with a cloth, and let it rise for 1.5-2 hours, or until doubled in size.
  6. Once the dough has risen, punch it down gently and refrigerate for 1 hour to firm it up for easier handling.
  7. Divide the dough into 8 equal pieces, shape each into a smooth ball, and place on a baking sheet lined with parchment paper.
  8. Cover buns loosely with a cloth and let them rise for 1 hour until doubled in size.
  9. Preheat the oven to 375°F (190°C) while the buns rise. Whisk together 1 egg and 1 tablespoon milk for the egg wash, then brush buns generously with the wash.
  10. Bake for 18-20 minutes until the buns are golden brown on top. Cool on a wire rack.
