Description

Breakfast Pigs in a Blanket combine fluffy pancakes and savory breakfast sausage, creating a perfect balance of sweet and savory flavors. This easy, quick recipe is ideal for family breakfasts, brunch gatherings, or a fun weekend treat.

Ingredients

  • 12 cooked breakfast sausage links
  • 1 ½ cups all-purpose flour
  • 2 tbsp granulated sugar
  • 4 tsp baking powder
  • ½ tsp fine sea salt
  • 1 ⅓ cups buttermilk
  • 1 large egg, well beaten
  • 4 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Instructions

1. Prepare the Sausage:

  1. Cook the breakfast sausage links according to the package instructions. Once cooked, set them aside.

2. Prepare the Pancake Batter:

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate small bowl, combine the buttermilk, beaten egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry mixture and stir until just combined. Let the batter sit for 5 minutes.

3. Cook the Pancakes:

  1. Heat a large non-stick skillet over medium heat and lightly grease it with cooking spray or butter.
  2. For each pancake, pour about 3 tablespoons of batter onto the skillet, gently spreading it out.
  3. Cook for 2-3 minutes, until bubbles appear on the surface and the bottom is golden brown. Flip and cook for another 2-3 minutes, until the other side is golden brown.

4. Assemble the Pigs in a Blanket:

  1. Place a cooked sausage link in the center of each pancake.
  2. Roll the pancake around the sausage link and place the seam side down to keep it closed.
  3. Repeat the process with the remaining batter and sausage links.

5. Serve:

  1. Serve the Breakfast Pigs in a Blanket warm, drizzled with syrup, or with syrup on the side for dipping.
