Ingredients
- 12 cooked breakfast sausage links
- 1 ½ cups all-purpose flour
- 2 tbsp granulated sugar
- 4 tsp baking powder
- ½ tsp fine sea salt
- 1 ⅓ cups buttermilk
- 1 large egg, well beaten
- 4 tbsp unsalted butter, melted
- 1 tsp vanilla extract
Instructions
1. Prepare the Sausage:
- Cook the breakfast sausage links according to the package instructions. Once cooked, set them aside.
2. Prepare the Pancake Batter:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate small bowl, combine the buttermilk, beaten egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry mixture and stir until just combined. Let the batter sit for 5 minutes.
3. Cook the Pancakes:
- Heat a large non-stick skillet over medium heat and lightly grease it with cooking spray or butter.
- For each pancake, pour about 3 tablespoons of batter onto the skillet, gently spreading it out.
- Cook for 2-3 minutes, until bubbles appear on the surface and the bottom is golden brown. Flip and cook for another 2-3 minutes, until the other side is golden brown.
4. Assemble the Pigs in a Blanket:
- Place a cooked sausage link in the center of each pancake.
- Roll the pancake around the sausage link and place the seam side down to keep it closed.
- Repeat the process with the remaining batter and sausage links.
5. Serve:
- Serve the Breakfast Pigs in a Blanket warm, drizzled with syrup, or with syrup on the side for dipping.
