A fun and hearty Breakfast Lasagna made with layers of eggs, savory sausage, melted cheese, and soft tortillas, baked until golden and satisfying.
Ingredients
1 pound breakfast sausage, cooked and crumbled
8 large eggs
2 cups milk
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
8 flour tortillas
3 cups shredded cheddar cheese, divided
Salsa, sour cream, or chopped green onions (optional toppings)
Instructions
- Preheat the oven to 180°C (350°F).
- Cook the breakfast sausage in a skillet over medium heat, breaking it apart until browned and fully cooked. Set aside.
- In a large bowl, whisk together the eggs, milk, salt, black pepper, onion powder, and garlic powder until smooth.
- Lightly grease a baking dish.
- Place one flour tortilla in the bottom of the dish.
- Sprinkle a layer of shredded cheddar cheese over the tortilla, followed by a portion of cooked sausage.
- Pour a portion of the egg mixture evenly over the layer.
- Repeat layering tortillas, cheese, sausage, and egg mixture until all ingredients are used, finishing with cheese on top.
- Bake uncovered for 35–40 minutes, until the eggs are set and the top is melted and lightly golden.
- Remove from the oven and let rest for a few minutes before slicing.
- Serve warm with optional toppings if desired.
Notes
Let the lasagna rest before slicing so the layers hold together.
Add vegetables like bell peppers or mushrooms for extra texture.
Monterey Jack or pepper jack cheese can be used instead of cheddar.
Can be assembled the night before and baked in the morning.
