Description

A lighter twist on the classic BLT, this BLT Cauliflower Salad combines tender-crisp cauliflower, smoky beef sausage, fresh lettuce, juicy tomatoes, and a creamy tangy dressing for a refreshing and satisfying side dish.


Ingredients

1 large head cauliflower, cut into florets

1 cup smoked beef sausage, diced and lightly crisped

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

1/4 cup green onions, sliced (optional)


Instructions

  1. Cut the cauliflower into small florets, rinse under cold water, and drain well.
  2. Steam the cauliflower in a steamer basket for 5–7 minutes until tender but still slightly crisp. Remove from heat and let cool completely.
  3. In a skillet over medium heat, sauté the diced smoked beef sausage until lightly crisped and golden. Transfer to paper towels to drain excess oil and let cool slightly.
  4. In a small bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth and creamy.
  5. In a large bowl, combine cooled cauliflower, smoked beef sausage, cherry tomatoes, and chopped romaine lettuce.
  6. Pour the dressing over the mixture and gently toss until evenly coated.
  7. Taste and adjust seasoning with additional salt and pepper if needed. Sprinkle sliced green onions on top if desired.
  8. Refrigerate for at least 15 minutes before serving. Serve chilled or at room temperature.

Notes

Ensure cauliflower is fully cooled and well drained to prevent a watery salad.

For a lighter dressing, substitute half of the mayonnaise with plain Greek yogurt.

Iceberg lettuce can be used for extra crunch.

Add shredded cheddar, crumbled feta, or smoked paprika for extra flavor.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Do not leave the salad out at room temperature for more than 2 hours.
