Description

A fresh and unique pizza topped with creamy ricotta, juicy blackberries, mozzarella, basil, and a drizzle of balsamic glaze. Perfect for summer evenings when you want something light yet satisfying.


Ingredients

1 ball of pizza dough

1 tbsp olive oil, plus more for brushing

2 garlic cloves, minced

1 cup whole milk ricotta

1/2 cup shredded mozzarella

Salt and pepper, to taste

1 cup fresh blackberries

A handful of fresh basil leaves

2 tbsp balsamic glaze


Instructions

  1. Preheat the oven as high as it goes (around 500°F / 260°C) with a pizza stone inside.
  2. Let the pizza dough rest on the counter while the oven heats.
  3. In a bowl, mix ricotta, garlic, salt, and pepper to create the sauce.
  4. Stretch the dough and place it on parchment paper. Spread the ricotta mixture over the dough and sprinkle with mozzarella.
  5. Evenly scatter the blackberries across the pizza.
  6. Slide the pizza onto the hot stone and bake for 8–12 minutes, until the crust is golden and the cheese is bubbly.
  7. Let the pizza rest for 1 minute, then tear fresh basil over the top and drizzle with balsamic glaze before serving.

Swap blackberries with raspberries or figs for variation.

Drizzle honey instead of balsamic glaze for added richness.

Sprinkle toasted pine nuts or walnuts after baking for crunch.
