2 1/2 cups all-purpose flour
2 cups sugar
1/2 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
2 eggs
1 1/2 cups buttermilk
1/2 cup vegetable oil
2 tsp vanilla extract
Chantilly Cream:
2 cups heavy cream
1/2 cup powdered sugar
1 tsp vanilla extract (optional)
Instructions

Prepare the Cherry Filling: In a pot, combine cherries, sugar, cherry juice, and cornstarch. Boil for 2-3 minutes until thickened. Let cool.

Make the Chocolate Cake: Mix dry ingredients (flour, cocoa, baking powder, baking soda, and salt) and wet ingredients (eggs, buttermilk, oil, vanilla). Combine and beat until smooth. Divide the batter between two cake pans and bake at 350°F for 30-35 minutes. Cool, then slice each cake into two layers.
