Description

Big Boy’s Fresh Strawberry Pie is a nostalgic, no-bake dessert featuring fresh strawberries in a vibrant strawberry gelatin glaze nestled inside a flaky pie crust. This crowd-pleasing recipe is refreshingly light, perfect for spring and summer gatherings.


Ingredients

1 pre-baked 9-inch pie crust

1 quart fresh strawberries, hulled and halved

1 cup granulated sugar

3 tablespoons cornstarch

1 cup water

1 (3 oz) box strawberry gelatin

Whipped cream, for garnish


Instructions

  • Prepare the Crust: Make sure the 9-inch pie crust is fully baked and cooled.

  • Add Strawberries: Evenly arrange the halved strawberries in the pie crust.

  • Make the Glaze: In a medium saucepan, whisk together sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and becomes translucent (about 3–5 minutes).

  • Add Gelatin: Remove the saucepan from heat and stir in the strawberry gelatin until completely dissolved. Let the glaze cool slightly (it should still be pourable).

  • Assemble the Pie: Carefully pour the glaze over the strawberries, using a spoon or spatula to distribute it evenly.

  • Chill: Refrigerate the pie for at least 2 hours, or until the filling is fully set.

  • Serve: Garnish with whipped cream before serving. Slice with a sharp knife dipped in warm water for clean cuts.

Let the gelatin mixture cool slightly before pouring to prevent a soggy crust.
