Description
This no-bake coconut dessert is a quick, simple, and irresistible treat inspired by Bounty bars. With a chocolatey biscuit dough and a creamy coconut filling, these chilled rolls are perfect for satisfying your sweet tooth without turning on the oven.
Ingredients
2 cups plain biscuits (graham crackers or vanilla wafers), finely crushed
5 tablespoons unsweetened cocoa powder
1 tablespoon granulated sugar
1/2 cup whole milk
1 cup shredded coconut flakes
2/3 cup powdered sugar
4 tablespoons unsalted butter, softened
Instructions
- Crush the biscuits into fine crumbs using a food processor or blender. Transfer to a bowl and combine with cocoa powder and granulated sugar.
- Gradually pour in the milk while mixing until a soft dough forms. Knead lightly until smooth and set aside.
- In a separate bowl, combine shredded coconut with powdered sugar. Add softened butter and mix until creamy and well-combined.
- Roll the dough into a rectangular sheet on a clean surface. Use plastic wrap on top of the dough to prevent sticking. Flip and remove the wrap once rolled.
- Spread the coconut filling evenly across the dough and gently press it into the surface.
- Roll the dough tightly into a log, starting from one edge. Wrap in plastic wrap and refrigerate for 3–4 hours or until firm.
- Once chilled, unwrap and slice into even rolls. Serve chilled.
Notes
Add chopped nuts like almonds or hazelnuts for a crunchy texture.
Use dark cocoa powder or drizzle with melted chocolate for an extra chocolatey kick.
Add a pinch of cinnamon or cardamom to the dough for a spiced twist.
For a vegan version, use plant-based milk and vegan butter.
Can be made into mini pinwheel bites by dividing dough before rolling.
