Description

This no-bake coconut dessert is a quick, simple, and irresistible treat inspired by Bounty bars. With a chocolatey biscuit dough and a creamy coconut filling, these chilled rolls are perfect for satisfying your sweet tooth without turning on the oven.

Ingredients

2 cups plain biscuits (graham crackers or vanilla wafers), finely crushed

5 tablespoons unsweetened cocoa powder

1 tablespoon granulated sugar

1/2 cup whole milk

1 cup shredded coconut flakes

2/3 cup powdered sugar

4 tablespoons unsalted butter, softened

Instructions

  1. Crush the biscuits into fine crumbs using a food processor or blender. Transfer to a bowl and combine with cocoa powder and granulated sugar.
  2. Gradually pour in the milk while mixing until a soft dough forms. Knead lightly until smooth and set aside.
  3. In a separate bowl, combine shredded coconut with powdered sugar. Add softened butter and mix until creamy and well-combined.
  4. Roll the dough into a rectangular sheet on a clean surface. Use plastic wrap on top of the dough to prevent sticking. Flip and remove the wrap once rolled.
  5. Spread the coconut filling evenly across the dough and gently press it into the surface.
  6. Roll the dough tightly into a log, starting from one edge. Wrap in plastic wrap and refrigerate for 3–4 hours or until firm.
  7. Once chilled, unwrap and slice into even rolls. Serve chilled.

Notes

Add chopped nuts like almonds or hazelnuts for a crunchy texture.

Use dark cocoa powder or drizzle with melted chocolate for an extra chocolatey kick.

Add a pinch of cinnamon or cardamom to the dough for a spiced twist.

For a vegan version, use plant-based milk and vegan butter.

Can be made into mini pinwheel bites by dividing dough before rolling.
