Ingredients

For the crust:

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 cup fresh strawberries, pureed

For the crunch topping:

1 cup crushed cornflakes or granola

¼ cup unsalted butter, melted

2 tablespoons brown sugar

½ teaspoon cinnamon


Instructions

  • Preheat the oven: Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.

  • Make the crust: Mix graham cracker crumbs, sugar, and melted butter, then press the mixture into the bottom of the prepared pan.

  • Prepare the filling: Beat the cream cheese until smooth. Add sugar and beat until combined. Add eggs, one at a time, then stir in vanilla and pureed strawberries.

  • Bake: Pour the cheesecake mixture into the crust and bake for 50-60 minutes, or until the center is set. Cool for 10 minutes, then refrigerate for at least 4 hours.

  • Prepare the topping: Mix crushed cornflakes, melted butter, brown sugar, and cinnamon. Sprinkle the mixture over the cooled cheesecake.
