Ingredients
1.5 lb beef tenderloin, cut into bite-sized tips
2 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
8 oz mushrooms, sliced (cremini or button)
1 cup beef broth
1 cup heavy cream
2 tbsp Worcestershire sauce
1 tsp dried thyme
Salt, to taste
Black pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the beef tenderloin tips in a single layer and sear until browned on all sides.
- Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until soft and translucent.
- Add the garlic and cook briefly until fragrant.
- Add the sliced mushrooms and cook until they release moisture and turn golden brown.
- Pour in the beef broth, Worcestershire sauce, and dried thyme, stirring to combine.
- Bring to a gentle simmer, then reduce heat and stir in the heavy cream.
- Simmer until the gravy thickens slightly.
- Return the beef to the skillet and cook just until heated through.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley and serve warm.
Notes
Do not overcook the beef to keep it tender.
Add a splash of broth or cream if the gravy thickens too much.
Fresh herbs can be substituted for dried.
