Beef Skillet Enchiladas are a quick, one-pan dinner that delivers all the bold, comforting flavors of traditional enchiladas without the extra effort. With lean ground beef, colorful vegetables, black beans, and melted cheese, this dish is hearty, nutritious, and family-friendly. It’s perfect for busy weeknights and reheats well, making it ideal for meal prepping.
Ingredients
For the Skillet:
- 1 tablespoon olive oil (or avocado oil)
- 1 pound lean ground beef (90-93% lean)
- 1 red bell pepper, diced
- 1 zucchini, diced
- 4 green onions, sliced
- 1 cup frozen corn (or fresh)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 cup red enchilada sauce (or homemade)
- 1 cup black beans (drained and rinsed)
- 6–8 corn tortillas (gluten-free if needed)
- 1 ½ cups Mexican cheese blend (or shredded cheddar or Monterey Jack)
For Toppings:
- Green onions, chopped
- Fresh cilantro, chopped
- Sour cream or Greek yogurt
- Diced tomatoes
- Sliced avocado
- Jalapeño slices
- Red onion
- Tortilla strips
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and grease a large oven-proof skillet or cast iron skillet.
- Sauté the Beef & Veggies: Heat olive oil in the skillet over medium-high heat. Add the ground beef, red bell pepper, zucchini, and green onions. Cook, breaking up the beef until browned and the veggies are tender.
- Add Seasonings and Other Ingredients: Stir in chili powder, cumin, garlic powder, oregano, enchilada sauce, black beans, corn, and 1 cup of cheese. Mix until well combined, then remove from heat.
- Layer the Tortillas: Cut the corn tortillas into strips or quarters and gently fold them into the skillet mixture.
- Bake: Sprinkle the remaining cheese on top and transfer the skillet to the oven. Bake for 15-20 minutes until the cheese is melted and bubbly.
- Serve & Garnish: Remove from the oven and garnish with your choice of toppings such as sour cream, cilantro, avocado, and more.

- Vegetarian Option: Skip the beef and add more vegetables or use a plant-based protein.
- Swap the Protein: You can swap ground beef with turkey, chicken
