Description

Bang Bang Chicken Skewers are tender, juicy, and coated with a creamy, spicy bang bang sauce made from sweet Thai chili sauce, sriracha, and mayo. These skewers are perfect for grilling or air frying and can be customized to suit your spice preference. A crowd-pleasing appetizer or main dish for any occasion!

Ingredients

For the Chicken Skewers:

1 ½ pounds boneless, skinless chicken thighs (or chicken breasts)

2 tablespoons olive oil

1 tablespoon sriracha (adjust for heat level)

Salt and pepper to taste

Wooden skewers (soaked in water)

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup Thai sweet chili sauce

1 tablespoon sriracha (adjust for heat)

1 tablespoon lime juice

Optional:

Hot honey for drizzling

Instructions

  • Prepare the Chicken:

    • Cube the chicken thighs (or breasts) into bite-sized pieces and place them in a bowl. Drizzle with olive oil and season with salt and pepper.

    • Thread the chicken pieces onto the soaked skewers.

  • Make the Bang Bang Sauce:

    • In a separate bowl, mix together the mayonnaise, Thai sweet chili sauce, sriracha, and lime juice. Stir until smooth.

  • Cook the Chicken:

    • Brush half of the prepared bang bang sauce over the chicken skewers.

    • Grill Method: Grill the chicken over medium heat for 8-10 minutes per side, or until cooked through (internal temperature of 165°F).

    • Air Fryer Method: Air fry at 400°F for 10-12 minutes, flipping halfway through.

  • Serve:

    • Once the chicken is cooked, remove the skewers from the heat and brush with the remaining sauce.

    • Optionally, drizzle with hot honey for an extra touch of sweetness.

    • Serve immediately and enjoy!

Notes

  • For Extra Spice: Add more sriracha to the sauce or drizzle with hot sauce after cooking.

  • Healthy Version: Substitute mayo with Greek yogurt for a lighter sauce.

  • Add Vegetables: You can add veggies like bell peppers, onions, or zucchini to the skewers for added flavor.
