Description

These Baked Garlic Parmesan Potato Wedges are the ultimate savory snack or side dish. With crispy edges and a tender center, they’re coated in garlic, Italian seasoning, and Parmesan cheese for a burst of flavor in every bite. Easy to prepare and bake, these potato wedges make the perfect accompaniment to any meal or stand alone as a delicious treat.

Ingredients

  • 4 large Russet potatoes, sliced into wedges
  • 4 tbsp extra virgin olive oil
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp Italian herb seasoning
  • ½ cup shredded Parmesan cheese
  • 2 tbsp fresh parsley (or cilantro, optional)

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a large baking sheet.
  • Place the potato wedges in a large bowl. Drizzle with olive oil and toss to coat.
  • In a small bowl, whisk together the salt, garlic powder, and Italian seasoning. Sprinkle the seasoning mixture over the potatoes and toss to coat evenly.
  • Arrange the potato wedges in a single layer on the prepared baking sheet, skin-side down.
  • Bake for 25-35 minutes, or until the potatoes are fork-tender and golden.
  • Remove from the oven and sprinkle with freshly chopped parsley and additional Parmesan, if desired.
  • Serve hot with your favorite dipping sauce.

Notes

  • For a spicier version, sprinkle red pepper flakes or cayenne pepper over the potatoes.
  • Add more shredded cheese during the last few minutes of baking for a cheese lover’s version.
  • You can substitute regular potatoes with sweet potatoes for a healthier twist.
