Ingredients
- 4 large Russet potatoes, sliced into wedges
- 4 tbsp extra virgin olive oil
- 2 tsp salt
- 2 tsp garlic powder
- 2 tsp Italian herb seasoning
- ½ cup shredded Parmesan cheese
- 2 tbsp fresh parsley (or cilantro, optional)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a large baking sheet.
- Place the potato wedges in a large bowl. Drizzle with olive oil and toss to coat.
- In a small bowl, whisk together the salt, garlic powder, and Italian seasoning. Sprinkle the seasoning mixture over the potatoes and toss to coat evenly.
- Arrange the potato wedges in a single layer on the prepared baking sheet, skin-side down.
- Bake for 25-35 minutes, or until the potatoes are fork-tender and golden.
- Remove from the oven and sprinkle with freshly chopped parsley and additional Parmesan, if desired.
