Description

Baked Apple Cider Donuts are a soft, moist, and tender fall treat that combines the warmth of cinnamon, nutmeg, and cardamom with the richness of apple cider. These cake-like donuts are baked instead of fried for a slightly healthier indulgence.


Ingredients

1.5 cups apple cider

1 large egg

⅓ cup granulated sugar

⅓ cup brown sugar

3 tablespoons unsalted butter, melted (or coconut oil)

½ cup whole or 2% milk

1 teaspoon vanilla extract

1 ¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon cinnamon powder

¼ teaspoon nutmeg powder

⅛ teaspoon cardamom powder

1 cup granulated sugar (for topping)

1 teaspoon cinnamon powder (for topping)

½ teaspoon nutmeg powder (for topping)

½ teaspoon cardamom powder (for topping)

½ cup unsalted butter, melted (for topping)


Instructions

  1. Reduce the cider: Pour the apple cider into a nonstick saucepan and cook over medium heat until reduced to about ⅓ cup. Set aside to cool to room temperature.
  2. Prepare wet ingredients: In a large mixing bowl, whisk together the egg, granulated sugar, brown sugar, melted butter, milk, and vanilla extract.
  3. Combine dry ingredients: In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and cardamom.
  4. Mix wet and dry ingredients: Add the dry ingredients to the wet ingredients along with the cooled reduced cider. Mix until just combined.
  5. Prepare donut pan: Grease a donut pan or use a piping bag to pipe the batter into the pan, filling each donut mold halfway.
  6. Bake: Preheat the oven to 350°F (175°C) and bake for 10 minutes or until a toothpick inserted into the center comes out clean.
