Description

This Baby Spinach Omelet is a healthy, flavorful, and quick breakfast. With tender baby spinach, savory Parmesan cheese, and a hint of nutmeg, it’s the perfect way to start your day. Light yet satisfying, this omelet is packed with nutrients and takes just minutes to prepare.

Ingredients

2 eggs

1 cup torn baby spinach leaves

1 ½ tablespoons grated Parmesan cheese

¼ teaspoon onion powder

⅛ teaspoon ground nutmeg

Salt and pepper to taste

Instructions

  1. Gather all ingredients.
  2. Beat the eggs in a bowl and stir in the baby spinach and Parmesan cheese.
  3. Season with onion powder, nutmeg, salt, and pepper.
  4. Spray a small skillet with cooking spray and place over medium heat. Once warm, pour in the egg mixture and cook until partially set, about 3 minutes.
  5. Flip the omelet with a spatula and continue cooking for another 2-3 minutes.
  6. Reduce heat to low and continue cooking for 2-3 more minutes or until the omelet reaches your desired doneness.
  7. Serve warm and enjoy!

Notes

Try different cheeses like feta, goat cheese, or cheddar for varied flavor.

Add extra veggies like mushrooms, onions, or bell peppers to make it heartier.

Fresh herbs like basil, parsley, or thyme can be added for fragrance.
