Ingredients
1/2 avocado, sliced
4 slices mozzarella cheese
4 cherry tomatoes, sliced in half
2 slices multigrain bread (Ezekiel sprouted grain bread works great)
A dab of butter
Optional Substitutions: For a vegan version, use your favorite plant-based cheese and butter. You can also add fresh basil or a drizzle of balsamic glaze for extra flavor.
Instructions
- Butter the Bread: Butter the outside layers of both slices of bread to ensure a golden, crispy exterior as it grills.
- Assemble the Sandwich: Place one slice of bread, buttered side down, on a frying pan heated to medium heat. Layer the mozzarella cheese, sliced tomatoes, and avocado slices on top of the bread.
- Top and Grill: Place the other slice of bread on top, butter side up. Grill the sandwich for a few minutes on each side, flipping it carefully once the bread is golden brown and the cheese starts to melt.
