Description

Apricot, Orange Blossom & White Chocolate Fool is an elegant and modern twist on the classic fruit fool. Combining ripe apricots, the floral fragrance of orange blossom, and the richness of white chocolate, this mousse-like dessert is light yet indulgent, perfect for special occasions.


Ingredients

17⅔ oz fresh ripe apricots

Zest and juice of 1 lemon

5 oz golden caster sugar

1⅔ oz high-quality white chocolate

5 amaretti biscuits

10⅛ fl oz double cream

7 oz mascarpone cheese

½ tsp orange blossom water (or 3 tbsp Cointreau or Triple Sec)


Instructions

  1. Cut apricots in half, remove pits, and chop into small pieces. Combine apricots, lemon zest, lemon juice, and sugar in a saucepan. Cook over medium heat for 10-12 minutes until softened and jam-like. Let cool.
  2. Melt white chocolate in a heatproof bowl set over simmering water or in the microwave. Let it cool slightly.
  3. In a mixing bowl, whip double cream until soft peaks form. Add mascarpone and continue whipping until smooth and thick.
  4. Fold melted white chocolate into the whipped cream and mascarpone mixture until fully combined.
  5. Crush amaretti biscuits into coarse crumbs using a rolling pin or food processor.
  6. In individual glasses or ramekins, layer the apricot mixture, creamy white chocolate mixture, and amaretti crumbs. Repeat layers and finish with amaretti crumbs on top.
  7. Chill for at least 30 minutes before serving. Optionally, garnish with additional amaretti crumbs or fresh apricot slices.

Notes

Substitute the apricots with peaches, nectarines, or plums for a different flavor profile.

Add a splash of Cointreau or Triple Sec to the apricot mixture for an adult version.

For a non-dairy variation, use coconut cream and a dairy-free mascarpone substitute.

For a different texture, swap amaretti biscuits with graham crackers or biscotti.
