Description

Ingredients

4 boneless, skinless chicken breasts

1 cup freshly squeezed lime juice

1 tablespoon olive oil

1 tablespoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded Monterey Jack cheese

1/2 cup diced tomatoes

1/2 cup sliced green onions

1/4 cup fresh cilantro, chopped

Tortilla strips for garnish (optional)

Instructions

  1. In a bowl, combine lime juice, olive oil, chili powder, garlic powder, onion powder, cumin, salt, and black pepper.
  2. Add chicken breasts to the marinade and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).
  3. Preheat grill to medium-high heat.
  4. Remove chicken from marinade and grill for 6–7 minutes per side, or until internal temperature reaches 165°F (75°C).

Notes

For baking, cook at 375°F until chicken reaches 165°F, then broil briefly to melt the cheese.
