Description
A hearty Polish-inspired casserole layered with tender potatoes, buttery cabbage, sweet onions, creamy sauce, and melted cheddar cheese. This comforting, budget-friendly dish works beautifully as a vegetarian main course or satisfying side dish.
Ingredients
2 pounds russet potatoes, peeled and thinly sliced
1 medium green cabbage, about 2 pounds, shredded
2 tablespoons butter
1 medium yellow onion, diced
3 cloves garlic, minced
1 cup sour cream
1/2 cup heavy cream or milk
1 1/2 cups shredded cheddar cheese, divided
1 teaspoon salt, adjust to taste
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon caraway seeds, optional
2 tablespoons fresh parsley, chopped, optional
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or nonstick spray.
- Bring a large pot of salted water to a boil. Add the sliced potatoes and cook for 5 to 7 minutes until slightly tender. Drain and set aside.
- Melt the butter in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened.
- Add the minced garlic and shredded cabbage. Cook for 8 to 10 minutes, stirring occasionally, until the cabbage is tender.
- In a separate bowl, combine the sour cream, heavy cream or milk, salt, black pepper, paprika, and caraway seeds if using. Mix until smooth.
- Arrange half of the cooked potatoes in the prepared baking dish.
- Spread half of the cabbage mixture evenly over the potatoes.
- Spoon half of the creamy sauce evenly over the cabbage.
- Repeat the layers with the remaining potatoes, cabbage mixture, and creamy sauce.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Cover the casserole with foil and bake for 25 minutes.
- Remove the foil and bake for another 15 to 20 minutes, until the cheese is melted, bubbly, and lightly golden and the potatoes are completely tender.
- Let the casserole rest for about 10 minutes before slicing.
- Garnish with fresh parsley if desired and serve warm.
Notes
The casserole can be assembled up to 1 day ahead, covered, refrigerated, and baked when ready to serve.
For a heartier variation, add cooked kielbasa or smoked sausage between the layers.
For a meat-free variation, add sautéed mushrooms, carrots, or leeks.
Sharp cheddar, Gruyère, mozzarella, Swiss, or Monterey Jack can be substituted for the cheddar.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freeze cooled portions or the entire casserole for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat at 350°F (175°C) until warmed through, or microwave individual portions until hot.
